This is a really, really simple recipe. I hardly ever see quail recipes, but they are a tasty bird. I don't know why this is. Did quail roast go out of fashion or something? I get sick and tired of boring old chicken and this makes a nice change. Although I roasted these, you could as easily smoke them, but roast quail is awesome. You will need:
- 2 Quail per person
- 2 table spoons of pork sausage meat per quail
- half a rasher of bacon per quail
- salt and pepper
First, preheat the oven to 350F, then rinse and dry the quail with paper towels. Stuff them with the sausage meat, wrap the half rasher of bacon over the breast, and keep in place with a wooden skewer or tooth pick, sprinkle with salt and pepper, then cook in the oven for around 45 minutes, depending on the size of the quails. These were small so cooked fast. Really - when the bacon is crispy, they should be done.
I cooked these in my trusty cast iron skillet, but a baking tray will work as well. I served them with a salad dressed in olive oil and white balsamic with a little salt and pepper - as I am still on my low carb diet. Scrumptious and easy to make these, but they are a little different and quite impressive to serve to guests. If you are making them as an appetizer, one would be enough.
